I think you are right Chis. Personality figures would be good, no one has done that apart from a possible George Washington on horseback in the Airfix set. I think civilians would be good too, women, children and old people, blacksmith, farmers, preacher, doctors and others. Again, no one does these, even if they were only a few different figures in each box as has been done with other eras.
Hessian troops, and Indians too would be great as well. Making products outside what has already been done is always a good idea.
If the sculptors need help with sources I can send over a PDF copy of the Digby Smith & Kevin Kiley Illustrated Encyclopedia The American Revolutionary War, Uniforms from 1775-1783 (2008).
