found have either a collar or a simple breast strap type harness
My experience as well. With equids a collar more or less sits on the scapula- shoulder blade and the harness on the sternum.
Oxen have thicker set necks so they can pull with a yoke. The yoke tends to be umpteen variations of this:
the drawbar fixes to the loop in the middle.
