I would not be so quick to disregard the Napoleonic Ottomans we are all familiar with big five France, Britain, Austria, Russia and Prussia the Ottomans are the sixth great power from the Napoleonic Wars.

In this period the Ottomans fielded larger armies and fought more major battles against European powers than Prussia, they fought almost continually with or against France, Britain, Austria and Russia and inflicted Napoleons first defeat at the Siege of Acre in 1799.

Russia's massive army was never fully free to participant in the Napoleonic Wars due to the fear of the Ottomans on it's southern borders, only in 1812 were the Russians able to make peace on the Ottomans terms, allowing the Russians to concentrate there full army against the invasion of Napoleon's Grande Armée.

The reasons why the Ottomans have not been represented before would probably down to a lack of information, but there would be no doubt they would be a spectacular colourful exotic Army with lots of possibilities of fighting for or against various European Armies.
