chocolate frosting
thanks to google.com, i have been able to find a chocolate cake recipe for my nephew who is allergic to milk, soy milk, eggs, and many berries. now, I need a recipe for frosting for this cake. I'd love for him to have something chocolatey and yummy that he can smush in his face and eat for his first birthday - thanks for any suggestions!

Hi, So glad you found a recipe you could use. Heres a frosting recipe that was passed along to me. I have not tried it yet so can't tell you if it's a winner or not but it sounds yummy to me. Try it and let me know how it worked for you. Thanks for dropping in and feel free to post again: )

Chocolate Marshmallow Frosting
2 cups powdered sugar
1/2 cup unsweetened cocoa powder
6 large marshmallows
4 tablespoons (half a stick) butter
1/3 cup plus 1 tablespoon milk
1 teaspoon pure vanilla extract
Sift the powdered sugar and cocoa powder together into a large mixing bowl. Set aside.
Place the marshmallows, butter and milk in a medium-size heavy saucepan over low heat. Stir until the marshmallows are melted, 3-4 minutes. Remove the pan from the heat. Pour the powdered sugar/cocoa mixture over the marshmallow mixture. Add the vanilla and stir until the frosting is smooth and satiny. Use at once to frost top and sides of cake. Makes about 1 1/2 cups, enough to frost the top of a tube or Bundt cake.
