2 Slo Cooker Recipes...Southwestern Chicken & Sausage Sauerkraut Supper

SAUSAGE SAUERKRAUT SUPPER

Slo Cooker


Serves: 10-12




4 c. carrot chunks (2-in. pieces


4 c. red potato chunks


2 cans (14-oz., each) sauerkraut, rinsed and drained


2-1/2 lbs. fresh polish sausage, cut into 3-in. pieces


1 medium onion, thinly sliced


3 garlic cloves, minced


1-1/2 c. dry white wine or chicken broth


1 tsp. pepper


1/2 tsp. caraway seed




In a 5-qt. slo cooker, layer carrots, potatoes and sauerkraut. In a skillet, brown the sausage; transfer to the slo cooker (slo cooker will be full). Reserve 1 T. dripping in skillet; saute onion and garlic until tender. Gradually add wine or broth. Bring to a boil; stir to loosen up browned bits. Stir in pepper and caraway. Pour over sausage.




Cover and cook on low for 8-9 hours or until vegetables are tender and sausage is no longer pink.

SOUTHWESTERN CHICKEN

Slo Cooker


Serves: 6




2 cans (15-1/4 oz., each) whole kernel corn, drained


1 can (15 oz.) black beans, rinsed and drained


1 jar (16 oz.) chunky salsa, 'divided'


6 boneless skinless chicken breast halves


1 c. (4 oz.) shredded cheddar cheese




Combine corn, black beans and 1/2 c. salsa in a slo cooker. Top with chicken; pout the remaining salsa over chicken. Cover and cook on high for 3-4 hours - OR - on low for 7-8 hours; or until meat juices run clear. Sprinkle with cheese; cover until cheese is melted, about 5 minutes.
