BROCCOLI POTATO SOUP

Ready in 15 minutes





Serves: 4





2 c. broccoli florets


1 small onion, thinly sliced


1 T. butter or margarine





1 can (10-3/4 oz.) condensed cream of potato soup, undiluted


1 c. milk


1/2 c. water


3/4 tsp. minced fresh basil..OR..1/4 tsp. dried basil


1/4 tsp. pepper





1/3 c. shredded cheddar cheese





In a large saucepan, saute broccoli and onion in butter until tender. Stir in next 5 ingredients; heat through. Add cheese; stir until melted,

ONION RYE BREADSTICKS


Great on multi-grain bread too.

Yield: about 7 dozen





1/2 c. butter or margarine, softened


1 envelope onion soup mix


14 slices rye bread





Combine butter and soup mix; spread over bread. Cut each slice into 3/4-in. strips and place on ungreased baking sheets. Bake at 350-F for 5-6 minutes or until butter is melted and breadsticks are crisp.

BARBECUED HAM BUNS...microwave

Ready in 15 minutes





Serves: 6





1/3 c. ketchup


1/3 c. water


3 T. brown sugar


3 T. sweet pickle relish


1 T. prepared mustard


1 T. vinegar





1 lb. thinly sliced fully cooked ham


6 hamburger buns, split





In a large microwave-safe dish, combine the first 6 ingredients; mix well. Stir in ham. Cover and microwave on high for 2 minutes. Stir. Microwave 1-2 minutes longer or until heated through. Serve on buns.





***NOTE: Recipe tested in an 850-watt microwave

TUNA BURGERS

Salmon can also be substituted


Ready in 15 minutes





Serves: 4





1 can (6 oz.) tuna, drained and flaked


1 egg


1/2 c. Italian-seasoned bread crumbs


1/3 c. finely chopped onion


1/4 c. chopped celery


1/4 c. chopped sweet red pepper


1/4 c. mayonnaise


2 T. chili sauce


1/2 tsp. dillweed


1/4 tsp. salt


1/8 tsp. pepper


Dash hot pepper sauce


Dash Worcestershire sauce





4 hamburger buns, split


Tomato slices and lettuce leaves, optional





In a bowl, combine the first 13 ingredients; mix well. shape into four patties (mixture will be soft). Coat a non-stick skillet with nonstick cooking spray; fry patties for 3-4 minutes on each side or until cooked through. Serve on buns with tomato and lettuce if desired.

PARMESAN NOODLES

Serves: 4





1 pkg. (8 oz.) medium egg noodles





3 T. chopped green onions


2 T. butter or margarine


1/2 c. grated Parmesan cheese


Garlic salt and pepper to taste





Cook noodles according to package directions; drain. Toss with remaining ingredients.

FAST FUDGE SUNDAES...microwave

Yield: 1-1/4 cups





1/2 c. semisweet chocolate chips


1 sq. (1 oz.) unsweetened chocolate


3 T. butter or margarine





1 c. confectioners' sugar


1 can (5 oz.) evaporated milk


1/2 tsp. vanilla extract


Ice cream





Place chocolate and butter in a microwave-safe bowl. Microwave on medium-high for 1 to 1-1/2 minutes. Stir in the remaining ingredients; beat until smooth. Microwave, uncovered, on medium-high for 5-6 minutes or until bubbly. Serve over ice cream.

GARLIC BROCCOLI SPEARS

Serves: 4-6





1 lb. fresh broccoli, cut into spears


2 T. olive or vegetable oil


1 T. lemon juice


1 garlic clove, minced


1/4 tsp. salt


1/8 tsp. pepper





Place the broccoli in a saucepan with a small amount of water; cover and cook until crisp-tender. Meanwhile, combine remaining ingredients. Drain broccoli and place in a serving dish; add lemon mixture and toss to coat. Serve immediately.

ROAST BEEF ROLL-UPS

Serves: 10





1/2 c. sour cream


1/4 c. mayonnaise


1/4 c. salsa





10 flour tortillas (8-in.)


1 lb. thinly sliced cooked roast beef


10 large lettuce leaves


Additional salsa





Combine the first 3 ingredients; spread over tortillas. Top with roast beef and lettuce. Roll up tightly and secure with toothpicks; cut in half. Serve with salsa.

TANGY POPPY SEED DRESSING

Yield: 3/4 cup





1/2 c. vegetable oil


1/4 c. cider or white wine vinegar


1 T. honey


1 tsp. Dijon mustard


1 tsp. poppy seeds


1/8 tsp. garlic powder


1/8 tsp. salt


Mixed salad greens





In a jar with tight-fitting lid; combine the first 7 ingredients and shake well. Serve over salad greens.

1 pkg. (4.4 oz.) quick-cooking LIPTON Alfredo noodles and sauce mix


1 can (6 oz.) tuna, drained and flaked


1 T. chopped green onion





Prepare noodles according to package directions. Stir in tuna and onion. Serve immediately.

THREE-STEP STIR-FRY

1 envelope stir-fry seasoning mix


1 pkg. (16 oz.) broccoli coleslaw


2 T. vegetable oil





8 oz. thinly sliced roast beef ..OR.. other deli meat, cut into 1/2-in. strips


1 can (8 oz.) sliced water chestnuts, drained


3 plum tomatoes, quartered


2 tsp. sesame seeds





Prepare seasoning mix according to package directions; set aside. In a skillet, stir-fry coleslaw in oil for 3 minutes or until crisp-tender. Add remaining ingredients and seasoning sauce. Cook 4 minutes longer or until heated through.
